Anthocyanins create the pigments red, blue and purple found in fruits and veggies. They are such powerful medicine!!! Anti-inflammation, anti-viral, anti-microbial, pro-circulation. Some treatments include Diabetes, ulcers, improves visual acuity… cherry juice treats and prevents the Gout.  The fruits and veggies high in these little beauties are so abundant right now. These frozen treats are a great way to preserve  well into the fall and winter. The thing I like about this, (over just throwing them into the freezer) is that you could add your medicinal herbs and  powders to them.  This makes it easier for some of the pickier patients to take their medicine. The cocoa powder adds flavor and additional health benefits to it. It’s really easy and fun for the kids to help. Enjoy!

Popcicles:

Take your cherries and berries and puree them in a blender. For every 5 cups of berries, add 1/2 c of raw cacao (or plain cocoa powder if the cacao isn’t in your budget). So play around with the tinctures and powders. 5 cups of berries will make about 10 normal Popsicles depending on the size you make or about 16 ice tray cubes. So you can add your “meds” accordingly. Add honey, agave, maple syrup, etc.,. It might not need additional sweetener. That depends on your harvest.

*You don’t need fancy Popsicle holders. Just use ice cube trays if you’d like. Add the wooden stick and you’re done.

*You can also just add the cubes to your smoothies, ices teas, water in lieu of  ice if you want to.

*Play around with spices like cinnamon, ginger, anise and mints also.

***I was playing around with these after I froze them. I pureed 1 cup of blueberries. Let them freeze. Then, thawed them in the fridge. They turned into gummys or jellies. Really great texture and flavor. Kids would love them.
