Candida’s Granola
Gluten Free, Vegan, Refined Sugar Free
There are so many of these recipes out there. This one is a huge hit at my house. Everybody loves it! It’s full of nutrients, fiber, protein, healthy oils and omegas. It is moderately sweetened with whatever you like. I use maple usually. Depends on what I have and what I feel like. Then, I add my protein powder, almond yogurt and fruit. It is such a satisfying and nourishing way to start the day. I eat it as a post workout snack and roll the sides of my homemade ice cream sandwich or as a ice cream or sorbet topper!
INTO THE OVEN OUT OF THE OVEN DONE AND YUMMY
Candida’s Granola
5 cups of “stuff”- Nuts, Seeds, GF Oats, Perky’s Nutty Flax, Puffed Rice or Millet (I do about 3 cups of the cereals and 2 and 1/2 cups of nuts and seeds.)
2 Tbl Ground Flax Seed
6-8 Fresh Medjool Dates, chopped
1/3 cup sweetener of choice, I like Maple Syrup.
1/4 cup Olive (My Favorite for this recipe), Avocado, Grapeseed… oil
1 1/4 tsp cinnamon
1/2 tsp cardamom
1/2 tsp Sea Salt
Mix all of the ingredients and spread over a greased cookie sheet. Bake at 325 degrees F for 25-35 minutes. Stir at around 11 minutes for even browning. It’s done when it’s golden brown. Let it cool for 5 minutes then break it up. Store in glass container.
***Remember that if you use molasses, it will be darker.
