People go bananas over this salad! Play around with the flavors if you’d like, but I think it’s perfect as is. Full of iron, minerals, vitamins, fiber and liver cleansing with all the lemon juice! Enjoy!

Arugula Salad:

1/2 onion diced

1 corn either pre-boiled or grilled then slice kernels off

1 small clove of garlic minced

2 very thinly sliced pieces of prosciutto, chopped and optional

5 cherry tomatoes halved

3 Tbl sliced almonds toasted

real salt and pepper to taste

4 Tbl olive oil

1-2 lemons

4 cups of arugula washed and dried

Shaved pecorino cheese optional

Instructions: 

Get 2 tsp of olive oil hot, not smoking, saute onion with a little salt and pepper until translucent. Next, throw in the garlic, prosciutto and corn. Saute for a few more minutes until golden. Add a small squeeze of the lemon to deglaze the pan.  Turn off heat. Toss in  arugula (I like to use tongs with this dish). Squeeze in the remaining lemon juice,  olive oil and salt and pepper (all to taste). Garnish with tomatoes, almonds and pecorino.

A really easy and quick salad. Easy on the eyes and so ridiculously delicious.
