Sunday brunch or freeze cooked waffles for a quick breakfast. Cover with fresh fruit, nuts and seeds. You can incorporate these into the batter also. I just want to make sure you get some good fats, antioxidants, protein and fiber with the waffles. It’s all abut moderation and balance. Yum!!!

WAFFLES:

1 cup gluten free flour (Do not use sweet rice, it makes it gummy)

1/4 c almond meal (Trader Joe’s)

1/2 c of a starch, potato, tapioca)

2 tsp b powder

1/2 tsp salt

1/4 c apple sauce

2 tbl coconut or maple sugar

2 Tbl oil, coconut is healthiest choice

1/2 c non cow milk, unsweetened

Mix all ingredients and cook according to waffle iron instructions.
